Kitchen & Canteen operations manual


OSE will consist of 2 areas Canteen for storage and Kitchen for preparing meals.

Main orders and stock items will be ordered through webstaurant. Com by manager and Catarina.

Walmart or Costco, will be local options when orders not completed on time.

OSE has an account with webstaurant. See Catarina

In webstaurant account there will be archived orders with different categories for specific orders. These will be numbered and catalogues on wiki.

Initial orders will consist of

Meals : Vegetarian Menus & Meat Menus

Snacks : all Dried fruit, Nuts, crackers etc

Drinks : all liquids we require.

Supplies : all cleaning supplies, meal utensils and dishware etc

Equipment : all Kitchen and Canteen hardware and peripheral tools.



All meals will be prepared the same for every meal. Each pot will contain @ 11 qt of premade food portions(veg & meat each time). This can be increased by adding another cooknserve unit

We will have 2 stainless steel work table for prep and cook.

One table will be used a serving station the other work station. The cook&serve equipment makes it we cook & serve from same unit.



For drinks there will be a separate stainless steel table to support a liquids station

This will have 3 units

We will have a portable wet bar with deep sink.This unit can be mobile for all event uses. There will also be access to the existing kitchen in OSE Dorm. We require a suitable sink for clean up. It xan be as simple as this.
