Kitchen & Canteen operations manual

OSE will consist of 2 areas Canteen for storage and Kitchen for preparing meals.

Main orders and stock items will be ordered through webstaurant. Com by manager.

OSE has an account with webstaurant.

Orders require 24-48 hours lead time to be delivered to Factor e farm.

In webstaurant account there will a file with different categories for specific orders. Meals Drinks Supplies Equipment

In each file at webstaurant account there will be subsections. Original specific orders will create our individual orders This will make recorders easy Will have a specific order number designated.


Meals will break down into Vegetarian Menus & Meat Menus Drinks will have all liquids we require Supplies will cover all cleaning supplies, meal utensils and dishware etc Equipment will consist of all kitchen and Canteen hardware and peripheral tools.



All meals will be prepared the same for every meal. There will be 2 propane burners and 2 20 qt pots. Each pot will contain @ 16 qt of premade food portions(veg & meat each time) We will have 2 stainless steel work table for prep and cook.



One table will be used a serving station the other work station. The contents of the 20 qt pots will transferred into the warming kettles 1 hour before serving time. To transfer food material from pot to Kettle we will use a large laden or small pot.



For drinks there will be a separate stainless steel table to support a drinking station. This will have 3 units 1 5 gallon water dispenser. 1 5 gallon juice dispenser, dual hot carafe for coffee/tea individual packets for coffee tea will be provided upon serving.


We will have a portable wet bar with deep sink.This unit can be mobile for all event uses. There will also be access to the existing kitchen in OSE Dorm. We require a suitable sink fir clean up.



Menu All Menus will be the same with choice of veg or meat dish. On serving table we will have items available for self serve. The meals will be served by Kitchen persons along with 2 pk crackers, 1 desert item. 1 Bun



Items to be available self serve 1 utensils pack 1 napkin 1 bowl 1 small plate 1 16oz cup 1 coffee or tea cup



Main course 1 Bowl of food 1 bun 2 pks crackers 1 Desert item
