Fruit Ice Cream
- 1 1/2 cup of fruit (raspberries, blueberries, etc.) - frozen or fresh
- 3/4 cup whole milk
- 2/3 cup sugar (or 1/3 cup sugar + 1/3 cup pureed dates(also known as roaches))
- 1 1/2 cup heavy cream
Dark Chocolate Ice Cream
- 1 cup whole milk
- 3/4 cup pureed dates (or 3/4 cup sugar)
- 3/4 cup cocoa powder (or less for a less intense cocoa flavor)
- 2 cups heavy cream
Sweeteners
- You can substitute pureed dates for powdered sugar, cup for cup, in most simple ice cream recipes, but in some the taste of the dates will be more noticeable than in others.
- In light colored ice cream (vanilla, raspberry, etc.) pureed dates will show as dark specks.
- It may be best to start by substituting only half the sugar in a recipe with pureed dates.
- Pureed dates won't be noticeable at all in the chocolate ice cream (the cocoa covers both the color and the taste of the fruit).
Instructions
- In a blender or food processor:
- 1. Puree the dates (if using) with a little bit of milk
- 2. Add the rest of the milk, sugar (if using), cocoa (if using), fruit (if using) and blend everything.
- 3. Stir in the heavy cream
- 4. Follow your ice cream maker instructions
