  • /4 cup whole milk
  • 2/3 cup sugar (or 1/3 cup sugar + 1/3 cup pureed dates)

  • You can substitute pureed dates for powdered sugar cup for cup in most simple ice cream recipes, but in some the taste of the dates will be more noticeable than others.
  • In light colored ice cream (vanilla, raspberry, etc.) the dates will show as dark specks. It may be best to start by substituting only hallf the sugar in the recipe with dates.
  • Dates won't be noticeable at all in the chocolate ice cream (the cocoa covers both the color and the taste of the fruit).

In a blender: 1. Puree the dates (if using) with a little bit of milk 2. Add the rest of the milk, sugar (if using), cocoa (if using), fruit (if using) and blend everything. 3. Stir in the heavy cream 4. Follow your ice cream maker instructions
