The D-Freeze Freeze Dryer (https://d-freeze.ca/) out of Canada would be my recommendation given your goals for validation of electricity cost and flexibility with applications like fruit powders. The cost is higher than a Harvest Right XL or a Blue Alpine Large but I've visited their facility and believe this to be the best countertop commercial-grade freeze dryer on the market.
