CNC Torch Table Height Control with Marlin Toolchain

Question

What do you think of using Marlin with its bed probing to probe an entire sheet on an oxyfuel CNC torch table? This would enable the identical control software as the 3D printer. I don't see why this would not work when a water table is used, so the original probed sheet does not warp and the initial probing eliminates the need for realtime probing. That way, we are using our same inductive sensor as on the 3D printer, and just retract it upon beginning of cutting.
