Paul's Breakfast Casserole
Low on ingredients at the end of a grocery cycle? Make an easy and delicious improvised casserole from what you have left!
- Dice potatoes into 1/2" cubes and boil in enough water to cover them. Salt
* At least one potato per person
- Cook separately
* turkey bacon or ground beef * vegan meat crumbles, like Quorn
- Combine ingredients into two baking dish.
* Add melted vegan butter, salt, pepper, cumin, oregano to taste. * Mash with a fork until creamy, taste frequently to adjust spices.
- Crush enough wonton noodles (you can use two bowls nested together as a uniform mortar and pestle)
and sprinkle on top.
- For the non-vegan one, grate enough cheese to cover the top.
- Bake at 400 deg until cheese is melted and toasted light brown, about 30 minutes.
