An Open Source DSLR and an Open Source Medium Format Camera would be neat as those are things rarely made by the industry as is. The former is being phased out for Mirrorless Cameras with Digital Viewfinders .
There is some work on Open Source Medium Format Film Cameras and Project Gigapixel for that niche, but DSLRs are largely not done
(Granted it probably has to be assembled in a Cleanroom and short of Huygens Optics having all the right kit+knowhow to make precision optics chain is really a challenge.
Making a camera body compatible with COTS Lens Mount Standards using COTS parts (from as simple as a Raspberry Pi Camera to a more high end sensor chipset + IO etc is doable though, granted debatable benefit perhaps.
FINALLY Open Source Firmware/Software Suites exist for Photography/Videography
RawTherapee (Software) / Another RawTherapee (Software)
Also Microfiche/Microfilm]] / Microdots ESPECIALLY with non-silver emulsion containing film ( Azo-Dye based etc) would be neat as well, but that’s a whole other rant!
