I was looking into these, albeit mainly for Epoxy Casting / Silicone Casting (Although i feel like i am seeing them more and more, now that i am aware. BPS Space used it to Degas the Solid Rocket Fuel, As a component of a Freeze Dryer , for Vacuum Distillation / Vacuum Filtration etc, all sorts of uses!
(Also you can go into your Ultra-High Vacuum stuff too for Micro/Nanofab) (Also Electron Microscopy )

You have your single stage, and two stage pumps typically
Main specs to look for are flow rate, maximum vacuum, and also if they are oilless, or if they use oil what type etc
Some also have an Oil Mist Filter to prevent the smoke issue. On the scale of "bad things" the Oil/Fluorinated Oil probably not the worst, but overabundance of caution and whatnot
