List of organisms useful in OSE context

Purpose

This page is serve as a list of organisms from the five kingdoms of the biome that could be useful in an OSE context. It is meant to link to a pages for the organism or the product ecology they are assisting in. This is a list to assist in the gathering of the first OSE gene bank. An enterprising person could make a spreadsheet that organizes the list according to taxonomic classification (including subspecies, strain and breed), product ecology, at FeF, sourcing information, priority, and other information.

Fungi

Edible Mushrooms

Mostly the fruiting bodies of a diverse number of species. Some are cultivated and some only found in the wild.

Yeast

Budding yeast

  1. Saccharomyces cerevisiae - used in brewing, baking, and production of nutritional yeast.
  2. Saccharomyces boulardii - probiotic yeast, used in fermentation and probiotic foods.

Fission yeast

  1. Schizosaccharomyces pombe - alternative brewing yeast

Molds

Aspergillus oryzae / Aspergillus sojae - used to produce fermented soy products like soy sauce and miso Rhizopus oligosporus - used to produce tempeh from soybeans

Bioluminecent Fungi

  • Neonothopanus gardneri

Algae + Plankton

  • Pyrocystis fusiformis
  • Spirulina (Arthrospira platensis)
  • Chlorella
  • Gelidium amansii
  • Chlamydomonas moewusii
  • Schizochytrium

Bacteria

  1. Lactobacillus
  2. Zymomonus mobilis
  3. Acetobacteria
  4. Clostridium
  5. E. coli (Non-Pathogenic Strains)

  4. Stevia (Not technically sugar, but Steviol is a nice sugar substitute sweetner)
